June Meal Plans

All of a sudden the heat turned on around here and that's when my oven turns off winky.gif 

 

I was having a tough time planning out this month because I am going wheat-free.  Add that to the warm weather and it takes some creative planning.  I know I don't like to cook as much in hot weather especially since it heats up the kitchen so much, and since the kids want to be outside anyway it make grilling a very appealing option.  For lunches the kids and I will be eating leftovers and on Sundays we'll all be having some nice, refreshing (and quick!) smoothies from whatever happens to be hanging around in the freezer.  Here is our plan:

I've got the first half of june!

 

battered cod, brn rice and gr. beans

burgers and corn on the cob

snapper, pasta or rice and veg

Taco pie

potato soup and chicken pannis

port tenderloin and pots and a roasted peppers

steaks, au gratin pots and a corn

chicken enchiladas

grilled chicken, pasta and veg

pancakes, bacon and eggs

spaghetti, meatballs and garlic bread

home made chicken nuggets, mac/cheese and peas

chili w/noodles and corn bread

ricotta and spinach stuffed chicken breasts, pasta w/oil

meatloaf and mashed taters

 

For weekend lunches/breakfasts/brunch I have planned

chicken/pasta/veggie stir fry

french dips (roast in crock pot/on rolls)

BLT's and chips

Sausage biscuits and gravy and eggs

I do my meal plans weekly because that's more realistic for me (and even then I fail) 

 

The rest of the week:

T - salads with pear, gorgonzola and walnuts 

F - BLT pizza 

S - Whatever DH decides to cook : ) 

S - Hamburgers, beans, macaroni salad

You can do beans, chicken, etc. in the crock-pot (if you have one) and set it outdoors to cook - or in the garage, as I do.  Keeps the heat out of the house.

I'm planning about a week at a time.

In no particular order:

1. grilled steak, baked potatoes, corn

2. Parmesan chicken, salad, garlic bread, cake

3. pancakes, sausage, fruit

4. Tandoori style chicken, rice, veggies

5. tomato soup with alphabet pasta, grilled cheese sandwiches

6. sloppy joes, french fries, peas

7. General Tso's chicken, rice, egg rolls

8. Spaghetti

for the next week:

breakfast burritos & watermelon
tacos & pinto beans with jalapenos
fish filets, sweet potato fries, peaches
16-bean soup, cornbread

it's just me & the kids this week, so we'll have plenty of leftovers to finish out the week.

Breakfast Burritos sound yummy...my pregnancy cravings say that is what I am having for lunch LOL
