Ideas for Gluten Free Veg camping meals?

Hi everyone! Camping season is approaching and I am looking for ideas for gluten free camping meals. One thing that I love to make is foil dinners, and that will be easy, but I am at a loss as to what else I can bring and make. I am use to veggie burgers and hot dogs for camping.

 

I am the only gluten free one (lacto-veg), my DF is omni, and my kids are mostly vegan.

When we go on picnics, I bring rice cakes, almond butter, and jelly. We eat these open faced. Don't make them ahead as they get soggy.

 

What about cooking a pot of pasta on the grill and heating some spaghetti sauce? Or bring along pre-made pesto. (We love tinkyada brown rice pasta.)

 

They sell gf vegan burgers at Sunflower Market, but I haven't tried those.

 

Baked potatoes, of course.

oh, the rice cakes with PB&J sounds like a good idea.. everyone else would probably prefer regular bread. That would make a great snack or lunch.

 

I like the idea of making a pesto pasta, maybe even ahead of time, and bringing that along.

 

I wish I had a sunflower market here. I live in a small city, and while we have lots of veg stuff here, not a lot of gf veg comfort foods.

 

How do you do baked potatoes camping?

DH is gf free (tho not veg) and we always bring an old skillet to cook eggs on the fire. We also bring milk and cereal, foil pack meals. I pre-made breakfast burritos with corn tortillas, he ate them but they were awfully soggy, not the best experiment, lol. We also do rice cakes, fresh fruit, chips. Really nothing overly exciting here, not much help, I suppose. Mmm..a yummy treat is to split open a banana length-wise with the peel on, stuff with chocolate, wrap in foil and grill. Delish alternative to smores.

Pierce a washed potato with a fork a few times, wrap in foil, throw on the coals until they're cooked. (As I recall from my childhood.)

 

The problem with making rice pasta ahead of time is I find it is hard when it is cold. Even the tinkyada brand (which you can buy from amazon.com http://www.amazon.com/Tinkyada-Brown-Shells-Gluten-16-Ounce/dp/B004725KQ6/ref=sr_1_5?s=grocery&ie=UTF8&qid=1307078090&sr=1-5 If you get the tinkyada, do not cook as long as the package says. I cook 8 minutes or so otherwise it is too soggy.) Our favorite shape is the little dreams, but you have to buy a dozen off amazon. They just have the best consistency for us.

Great ideals.  I am learning a lot!!

 

Anyway have you every tried "Tofu Pups"  gf.  They are pretty good. 

 

I don't know of any gf burgers that are good.   Sorry eyesroll.gif
