Kitchen lighting

We are renovating our kitchen - new cabinets and counters. The only lights we will have in our kitchen which has the kitchen at one end and a small eating area at the other are one light in the middle of the ceiling and then a light in the hood fan over the stove. (We've looked at adding other lighting but it involves more electrical work than we want to do right now). Any suggestions for a nice main light in the middle of a 10'x16' room? I want it both to look nice and be pretty bright since it will be really the only light in the room.

I love IKEA light fixtures, they have a wide range of styles and options.

How high are your ceilings?  I love more dangly lights, but they don't work in our kitchen with its 7.5 foot ceiling.

You can get undercabinet lights that just plug in to a regular outlet, no extra electrical work needed.  I got mine at ikea, but all the hardware stores carry them.

Our ceilings are about 8' - I think just a normal height. My main concern is that it's bright enough. What we have right now (which actually doesn't even work anymore anyway) isn't bright enough. I am thinking track lighting is my best option. Then I can aim the lights where I need them. I'm not crazy about track lights though!

I think track lighting might be the way to go.
