Major fits and what to do once they are going

My almost three year old and I have a problem.  Lately he's been having huge, massive, scream so long he has no idea why he's even mad fits. Twice he has passed out from exhaustion which ruins bedtime.  These are usually over things that I can't change. For example, once his banana broke into two pieces while he peeled it. One was because he wanted my mom to unbuckle his carseat -- but we had just dropped her off and she wasn't even with us.  

I'm pretty good at heading them off -- I can word things so he understands, or act playfully if I know we're headed toward danger. I'm pretty aware of his needs and I'm very accommodating, but these tend to sneak up on me.  What I DON'T know is what to do once the fit has begun. He rejects everything I'm offering (water, distractions, hugs) but if I try to ignore him he follows me around the house, pulling on my clothes.  He calls me Honey instead of Mommy and he'll scream "Honey! Help me! Hug!" but if I touch him he kicks/hits/pushes me away. My heart hurts for him and I have no idea what to do once he's that upset. Honestly, I have a hard time keeping myself composed. 

He doesn't normally nap and hasn't for months, and he's getting enough sleep at night. I don't think it a sleep issue.  He is getting his molars so I'm sure that isn't helping, but it's too much. 

Any advice, please?

I came here to write pretty much this exact post. Two days ago, my son was abducted by aliens and replaced with an imposter that knows only one word- "AAEEEEEIIIIIIIIIIIII!!!!!!!!!!!"

 

I'm not allowed to get him out of the car seat, either. My husband has to do it. And I can't push the cart at the grocery store if Daddy is with us. I ask him if he wants a drink, and his reaction is to bang his head off the floor while screaming. I've been thinking that it may be his molars coming in, but I haven't checked yet.

 

Please, please someone offer some advice. I am also having a hard time staying composed.
