Quick, silly question

Thread Starter

I just drained and pressed my tofu, and would like to marinate it in a soy sauce mixture to cook tomorrow night.  Is it okay to just leave it in a sealed bag in the marinade overnight if it's not totally immersed?  Or do I need to fully immerse it in the marinade to keep it from spoiling?  I've never marinated tofu for more than a couple of hours.  Just don't want it to spoil!  Thanks!

You're marinating in the fridge, right?  It should be fine.

It wouldn't spoil anyway in the fridge just from not being immersed overnight, but if you didn't have it covered the top could start to dry out. Having it in a bag should lock in enough moisture to prevent that though.
