what is your favourite summer salad?

I love all kinds of salads all year long - but last night I made the first spinach and strawberry salad of the year with spinach and strawberries grown about 2 km from here - and it was pure bliss. That is all I want to eat now.

 

What salad does that for you?

We've been eating a lot of spinach salad with strawberries and toasted almonds lately too. I found a honey curry salad dressing that's really nice with it.  

 

Tonight. for a change, I'm making an asparagus and strawberry salad. I think I'll make green mango salad later this week to go with some satays. I also like tossing roasted sweet potato or squash along with some toasted pecans and feta cheese in a green salad, but usually later in autumn.

 

I love hearty one-meal salads in the summer 

- salad nicoise

- broccoli salad

- sweet potato salad with chicken

I love one with spinach, beets, red onions and and goat cheese. Candied walnuts would be a good addition, too. I usually eat that with some sort of balsamic dressing.

I do something similar, with spinach, feta, cherry tomatoes, candied walnuts or pecans, and strawberries (or pears or grapes), with balsamic vinaigrette.

 I like a mixed lettuce salad with fresh garden peas, radish and shredded carrots. I also like green salad with fresh dill and thinly sliced red onion.

I love black bean salad and orzo salads! 

 

Black Bean Salad:

-1 can black beans (or make your own if you think of it ahead of time... I never do!)

-1 can corn (or use fresh)

-1/2 to 1 chopped bell pepper

-1/4 to 1/2 chopped red onion

-1 chopped avocado

-juice from 1-3 limes, to taste

-salt, to taste

 

Orzo Salad:

-cooked whole wheat orzo (I usually use about 1 c. uncooked)

-1/4 ish cup chopped kalamata olives

-1/4 ish cup chopped sun dried tomatoes

-1/4 to 1/2 chopped red onion

-1 chopped cucumber

-1/2 to 1 c. crumbled feta cheese

-olive oil and balsamic vinegar to taste

-black pepper to taste

LOL!!

 

I planned on having almost this identical salad for dinner tonight, but adding in some chopped red and orange bell peppers, chopped parsley, and grilled garlic shrimp, and substituting lemon juice for the balsamic vinegar. So funny that you posted it today.

Yum, sounds like a good way to change up my old recipe... I'll have to try it!

Chopped tomatoes with some olive oil, balsamic vinegar, salt, pepper and as much chopped fresh basil as I can get my hands on is as good as it gets today.

I especially love my mom's carrot salad.  She uses shredded carrots, raisins, canned pineapple with the juice, miracle whip, and 1 chopped apple.  It is soooooo tasty!  Dang, now I am craving that.eat.gif

It was great! I doubled the recipe so there would be leftovers for lunch. I ended up sauteeing the shrimp in olive oil, crushed garlic, Herbes de Provence (all out of fresh herbs) and the zest from the lemon I used in the dressing.

 

Last night I had a lovely, refreshing mango salad with dinner. It had julienned mango, red and green pepper and red onion in a ginger lime vinaigrette. Perfect for a hot summer night.

I realized I hadn't mentioned one of my favourite summer salads for hot, hot days. It's Nigella Lawson's Watermelon, Feta and Olive salad. I know that sounds like an odd mix, but it's very refreshing.

 

Watermelon, Feta and Olive Salad

 

1/2 red onion, thinly sliced

Juice of 2 limes

Half a watermelon

Handful of parsely, chopped

Hanful of mint, chopped

3 Tbsp. olive oil

8 oz. feta, chunked

4 oz black olives, pitted

 

Marinate the red onion in the lime juice for 15 or 10 minutes.

Cube the watermelon into bite sizes. Toss with feta, parsley and mint.

Add the onion and lime juice, olive oil and olives and toss to mix.

 

Delicious.

A mixed tomato salad with olive oil, basil, & salt/pepper has been my favorite lately (ideally a few different kinds of tomatoes).  So simple and delicious.  YUM.  The only unfortunate thing is that my kids hate fresh tomatoes so when we eat a tomato salad with dinner they need their own veg.
