Just a suggestion, but if you can afford it, maybe you can hire a personal trainer for a few sessions to get your dh set up with an eating and exercise plan that will work for him?  Or check out a book that has some eating/exercise routines.  These are a few I have used and liked:

Body for Life is amazing and only requires about 5 hours exercise per week.

TNT Diet is another good one, and the exercise is about the same.

New Rules of Lifting is another one my dh and I have used.

My husband goes into work early on Monday, Wednesday and Friday so that he can leave early and go work out. I meet him at the gym and drop the kids off at child watch. He then picks them up while I finish my work out, so they're not really in there too long. They're usually only in there for 45 minutes. DS2 is 6 months and pretty much EBF (I started going when he was 4 months). He does fine though in child watch though. DS1 is 2.5. He had a little trouble and would cry but I talked to him about being brave and how he wasn't going to be there that long, and how mommy needed to exercise to be healthy. A couple times later he loves it.

 

If you do go the child watch route, I think it's good to go around the same time so that they get used to the people watching them. My husband and I usually work out for 45 min to an hour 3 days a week.
