No-bake cookies

Mix in a medium saucepan the following ingredients:
1 c nondairy milk (I use So Delicious coconut milk)
1/4 c almond butter (or other nut or seed butter of your choice)
1/4 c sugar

Bring to a boil and let simmer, stirring, for about a minute. Remove from heat and add:
1 teaspoon vanilla
1.5-2 cups GF rolled oats, sliced almonds, coconut, sesame seeds, or similar items, in whatever combination sounds good

Drop by rounded tablespoonfuls onto aluminum foil and let sit until cool and hard.

This recipe got me through the first several months of being GF/DF. I'm off sugar now so I don't eat it anymore, but it sure is yummy.
