Root Kvass

I'm interested in experimenting a bit. Beet kvass is wonderful, and I thought a fermented beverage might be a good (easy!) way to prepare other root vegetables as well.

 

Has anyone tried making a drink similar to beet kvass, only with other root vegetables, such as parsnips, carrots, etc.?

I have made ginger carrots, but that isn't really a kvass.  You eat the shredded carrots and ginger, but the juice is also very good.

You gave me the idea of flavoring my carrot kvass with ginger. I used grated carrots, not sure why, and some chopped ginger. I hope the ginger will inhibit excessive fermentation and give it a nice flavor. I used some gold beet kvass as an inoculant, so the color should be beautiful. Hopefully it will taste good.
