A friend of mine gave me this recipe for something to curb my craving for chocolate. You need a food processor.
1/3 cup cocoa
1/3 cup chia seeds
1 cup nuts
1-1/2 cup dates (unsweetened)
1/3-1/4 cup of liquid (water, coffee, juice...to make it "stick")
Put chia seeds and nuts in food processor and pulse until the nuts are to the desired size. Add dates and pulse until blended. Add cocoa and liquid and finish pulsing until it's a big clumpy mess.
Scrape the doughy substance into a pan and press firmly to even it out. Let it solidify for a bit...30-60 minutes is good. Slice and enjoy!
I used dark chocolate cocoa, coffee, and a dash of vanilla in mine. Not only vegetarian, but flour- and sugar-free. The dates give it a good sweetness.
