Bulk Beef ordering - Anyone have experience with a local farm?

DH and I purchased a 14.8cu ft chest freezer and are gearing up to purchase a whole or a side of beef. We're looking on eatwild.com for sources, and it seems like prices and processes vary WIDLY between farms. We are feeling a little overwhelmed. I'm hopeful that someone in this tribe has experiences they might like to share, or suggestions and tips?

 

We will most likely get a side for ourselves. We want as much organ meat, bones, and fat as possible as well, so we'd like to have a good bit of influence on the processing. There's a chance we'll split a whole beef between ourselves and two other families, but that hasn't yet been worked out. 

 

Any help would be appreciated!

A friend of mine gets beef from Sycamore Springs in Frederick... they LOVE it!

Sycamore Springs looks pretty good. Their pricing is competitive and I like how close they are. Thanks for the recommendation!
