yes, it has lots of free glutamates. that's why instead of listing "MSG", products will often list "yeast extract" or other "extracts." if you're concerned about excitotoxins and that whole theory, i would think that would also apply to nooch, although you may not react to it the same way as straight up MSG powder.Â
I read a great article one night about this, but I kept falling asleep. It said it depends on what the yeast is grown on. I figured I'd google the article again, but when I tried, I couldn't find it. I'd love this info as well. (I'm wanting to make nut cheeses and they all call for nutritional yeast.)

I worried about this for a while, and looked into it quite a bit. After hemming and hawing, here's what I decided: people who react to MSG, they *react* to it. If you have no reaction from nooch, it's probably nothing to worry about.
