Vegan alfredo: Silken tofu blended with non dairy milk, yellow miso, nutritional yeast, a diced sauteed onion and some garlic. YUM! Add whatever other seasoning work for you. We like pesto or just some dried basil. You can also mix it with macaroni noodles and pour into a baking dish, top with bread crumbs mixed with EVOO and bake for 30 min. Then you have vegan mac & "cheese", just be sure to make the sauce pretty thin because it gets really thick while baking.
