Another no tomato thread--salsa and enchilada sauce

My daughter cannot eat tomatoes. We tried them again last week and she was so excited then threw a tantrum the first time we had to tell her no when we realized tomatoes are definitely a problem.

 

We live in Tucson so salsa and enchilada sauce are a big part of our life. Any suggestion for tomato free alternatives. (I haven't found a homemade green enchilada sauce I like and the only gluten free one I can find to buy has tomatoes.)

 

Our dietary requirements:

 

Vegetarian

No gluten

No dairy

No cane sugar (other sugars are fine, just not cane sugar)

No tomatoes.

How about cucumber salsa? I don't have a recipe, we just often use cukes in place of tomatoes or mixed into guacamole or whatever.

I'm not sure about enchilada sauce... I'm thinking something like (roasted) peppers and/or eggplant pureed with water or broth to replace the tomato?? I think that would give it a nice flavor...

Side note, I am starting to wonder if my DS has an issue with tomatoes... we had a ton of them one day & that evening and the whole next day he was a wreck... but other times he's had them and seemed 'normal' (which isn't exactly normal, but normal for him lol)

Sorry I don't have actual recipes, I don't use recipes often -- more for inspiration than to actually follow!

Sometimes someone else's inspiration is enough to inspire me, sometimes I need recipes. Using roasted red peppers for an enchilada sauce is an interesting idea. I think I'll google it.

 

Okay, googled it, but it's hard to find actual red peppers because the search engine just looks at red enchilada sauce.

 

Here's one recipe. I could omit the tomato (and I wouldn't do the chicken part):

I use the green salsa that Trader Joe's has as an enchilada sauce. We're big fans of fruit salsas here, just swap fruit - I've used mangos, watermelon, pineapple and oranges - for the tomatoes in any basic pico de gallo recipe.

 

Moles make great enchilada sauces, and, while most have tomatoes, they are not in a starring role. I bet you could swap any number of things in. I'd start by trying pumpkin.
