Is it even possible to eat that way without meat? I guess eggs are good. Beans make my bowels miserable. ANY ideas?

Yes, it's possible! I am vegan (so dairy-free & egg-free), gluten-free, & also mostly soy-free, was corn-free for a while too, so I've spent a lot of time working with food restrictions... It may be challenging at first but will get easier. Are there specific things you're looking for? Replacements to use in favorite recipes, ideas for protein, etc??

Nuts and seeds are good for protein, I even puree them into a lot of our meals because I have trouble eating enough of them otherwise. We do use beans a lot, have you tried different methods of preparing them? Like soak, rinse, soak, rinse, before cooking? Quinoa (and other seed grains) is a good source of protein as well.

If you are looking for convenience foods, there are some veggie burgers called Sunshine Burgers that are good & basically allergen-free. Also Daiya cheese is dairy & soy-free, and Earth Balance has a soy-free margarine (dairy-free) and a coconut oil version too. So Delicious has great coconut-based milks, yogurt, and ice cream. If you are eating eggs, you should be able to find a good number of options, I find egg-free is one of the things that most limits my convenience-food options because they're in a lot of the otherwise suitable products.
