I have blood sugar issues and need to stick with a low carb diet...I feel MUCH better when I do so, and I'm also trying to get to a healthier weight and don't want to get off track. Cheap low carb recipes?
I eat pretty low carb as well due to hypoglycemia. I like making whole chickens in the oven with veggies as a side and salad. Then the leftover chicken can go on salads the next day or into chicken tacos or something equally delicious. Chicken around here tends to be cheaper than beef, pork, or fish. Eggs are another great low carb meal. Whipping up eggs with cheese and sausage crumbles.... yum!

Sometimes we just have all-veggie meals! Like green beans, sauteed summer squash and small salad- roasted veggies (we like sweet potato, maybe try carrot or beet for less carbs) with a salad or fish/chicken- veggie soups, like butternut squash or brocolli, just cook with onions/celery/carrot/garlic and stock and blend with seasonings- roast chicken thighs marinated in mojo (spanish aisle; thighs are cheaper than other parts) with garlic-butter broccoli and peas. For snacks try kale chips (google the recipes!), raw veggies and apples with PB (is fruit too many carbs?). Breakfasts we like are eggs, fried ham, plain yogurt with berries (less sugar than most fruits), melons (also lower sugar), and green smoothies.Â

Same for us using a whole chicken. I'll bake a whole chicken one day and then next day boil the bones and use the rest of the chicken meat.

Another food that goes a long way is ground beef. We use local,hormone free,free range beef for Middle Eastern style stews.
An example 1 pound ground beef,browned with onion and garlic with about 2 pounds mixed vegetables and 1 pound peeled tomatoes. Our favourites are Green Beans,Califlower,carrots,potatoes,green peppers. You can use any vegetables in season. I spice it with curry and garam masala.

Oh yes, I know potatoes are not low carb but my son likes them and is so active he can have more carbs that DH and I. I cut large slices so they can be taken out.

More chicken! We love grilled chicken thighs (bone in with skin). Just salt, pepper, garlic powder and a some olive oil. Grill on medium heat (indirect...so the flame is not under the chicken) for 40-50 minutes. The chicken comes out crispy and juicy and delicious. And chicken thighs with skin and bones is one of the cheapest cuts. We usually eat with a side of veggies, whatever is cheap and in season, like grilled zucchini.Â

Ground beef is usually cheap too - we make taco salads with ground beef, some spices, lettuce, tomatoes and a little shredded cheese.

Oh yes I agree about Tacos! The ground beef will go a long way.
  Recently  this summer I made a taco salad.
I mixed chopped romaine,tomatoes,avacodos with cooked pinto beans,grated cheese. After I cooked and spiced the ground beef, I added it to the salad. and right before serving I added organic tortilla chips and dressing. The dressing was lime,olivie oil, sour cream and cilantro and a little chilli powder.
Everyone loved it!
