Sprouting vs. soaking flour in buttermilk vs. sourdough for GF flour

I want to start making bread and want to know what is the best option for us.  We are oat, wheat and barley free. 

 

I was looking at 'cultures for health' website, and they suggest a blend of flours for the GF sourdough.  Can I use just a all purpose mix to sourdough with 'CFH' starter?  I have 2 very young children, so I don't have lots of spare time for any of this, but really want to give my family good food.
