Does anyone have any advice or experience with children with swollen adenoids and tonsils?

Our #4 has had swollen tonsils and possibly swollen adenoids since about 18 months old. She has always been a mouth breather so I am not certain when it actually developed, I only noticed around 18 months. They have been swollen for most of her 4 1/2 years of life, however, sometimes more than others. We noticed that they were more swollen in the winter verses the warmer months, but that hasn't been the case lately. She was sitting at the computer the other day and her mouth breathing and throat breathing was rather loud and noticeable.
Her speech was delayed and she still has problems properly forming words although we have been working with her speech and when she wants to, she can speak very clearly.Â
We have tried eliminating dairy from her diet, and there wasn't any changes. Our two oldest had their tonsils and adenoids removed at  3.5 and 7 because they were so swollen, it was interfering with their sleep and their ability to eat. We had tried some alternative homeopathic therapies but went the conventional route when the issues became serious. I would like to avoid that if possible for our #4.
Our next move would be to change to a wheat free diet and I would love for that to be the answer. However, I tend to believe more illness meaning a need for a change not only physically but perhaps emotionally.Â
Any stories or advice would be welcome.
