Quick but healthy eats ideas

It was hard before just nursing the twins, but I'm really struggling with this new pregnancy to get enough to eat.  I just don't have time, and I'm so glad the kids will be going back to school so they won't be home eating all day long and leaving nothing in the pantry!  So, I'm struggling with quick and easy food ideas because my brain has ceased to function in this fog of twinfant fatigue and new pregnancy.  I can only seem to come up with nutritionally empty crap.

When I was pregnant with DS, whenever I managed time to myself, I ran to the kitchen and made stuff to freeze specifically for those times I needed something to eat but didn't really have time to cook. I made a lot of hearty soups and separated them into individual servings in bags, breakfast burritos, mini lentil loafs, basically whatever would freeze well and wouldn't take a lot of time to reheat. Soup is one thing I fall back on a lot when I need something healthy and quick to prepare. I keep chopped veggie mixes in the freezer, so I can just put on a pot of water, some veggie bullion, pour in the veggies, and let it go. Also, I pre chop and freeze a lot things that I use a lot when I cook (like onions and peppers) so meal prep doesn't take so long. Saves on dishes, too, when I don't need knives and cutting boards for every meal. Raw veggies and bean dips (like hummus) and fresh fruit are also nice and quick.

Oooh, raw veggies and hummus sounds really good!  Thanks for the suggestions.

I could not live it seems without Orgain organic protien drinks! Specially when I'm nursing a lot. I get them sent to me thru Amazons Subcribe and Save system, it makes them much cheeked and I always have them around. A bonus is that they taste great even room temp or warm, so I have them in my diaper bag and car and bedside table.
