Trying to sprout beans - why did they start to smell awful?

I was following Sally Fallon's recs for sprouting dried beans before using them in cooking - fill Mason jar 1/3 with beans, the rest of the way with water. Change water after 24 hours. Change water daily until beans sprout in 3-4 days. 

 

 

Well, they started to smell so bad that I threw them away. Where did I go wrong?

I believe that after the initial soak you don't soak them again.  you keep them in a jar and every 8 hours or so you rinse them thoroughly but no more soaking.

oh wait, i misread your post.  I thought you were making sprouts.  For soaking beans to cook them,  don't use a jar, use a bowl and you only need to soak them for 24-36 hours.  Add some pickle juice (like from bubbies pickles or home fermented pickles) or whey.  The fermentation will virtually eliminate the after-affects of beans ;-).  I have not had as much luck with whey, pickle juice works better it seems to me.  

 

3-4 days is way too long for soaking to cook, and if you really want to sprout them do it as I said in my first post.  Sprouting makes them lose their outer husk though, so they will be a great deal mushier when cooked.  

 

I like sally fallon, but a chef she is not and I take every recipe in that book with a grain of salt.  Some are good, a few are great, and many are awful.
