Canning!

While I start canning in June when strawberries come out, August and September seem like my busiest time.  Right now I'm canning corn, tomato juice, tomato sauce, just plain tomatoes, peaches, and pickles.  I'm also freezing green beans, corn, and other veggies.  Not that I have time this year to try much else, since I work full time and chase my toddler the rest of the time...  But what is everyone else canning?  Care to share your favorite recipes?

Foxberry (like a sweeter, rounder, cranberry) sauce (nothing fancy to the recipe here, just like any whole cranberry sauce), apple sauce, and soon I'm looking forward to the pumpkins being ready so I can make pumpkin butter.  Here's a recipe:

4 cups pureed pumpkin or winter squash

2 cups brown sugar

1 tsp cinnamon

1/2 nutmeg

1/4 tsp salt

1/2 cup honey

1/2 cup apple or orange juice

Cook until thick and translucent, and ladle into hot, sterilized jars, then can.  My kids love this on pancakes and all last year's is eaten.

 

My neighbour just borrowed (well I gave them) canning jars for pickled beets.  I hope I get some of those...mmm...

We did some canning for the first time this season! I have been freezing pesto for several years, but this year we made salsa and bread & butter pickles! It was so much fun. My daughter loved helping. We chose these 2 items to start with as we have food allergies and can't eat any salsa or pickles on the market.
