any good authentic hispanic recipes please.

does anyone have any real hispanic recipes dinners prefered. that you love and arent hard to make?

we like beef and chicken sometimes pork.

Picadillo de Chayote-- Popular Costa Rican dish

 

2 tbsp butter

1 medium yellow onion, diced

1-2 cloves garlic, minced

1 pound ground beef

1/2 tsp curry powder

1 green bell pepper

14 oz can diced tomatoes

2 Tbsp. tomato paste (optional)

2 large chayote, peeled, cored, cut into 1/2 inch cubes (Can use zucchini or other similar squash instead. I think you'd need about 4 small zucchini.)

1/2 cup frozen corn

 

Over medium heat saute onion in butter until soft. Add garlic, saute a few seconds. 

Add beef and curry powder, cook until beef loses pink color, breaking it up as it cooks.

Add bell pepper, tomatoes, tomato paste, chayote and corn. Lower heat, cover and cook until chayote is tender, about 15 min, stirring occasionally.

Season to taste with salt and pepper.

Serve with rice and/or corn tortillas.

 

(My grandmother always told me this was her best recipe for using up old vegetables so feel free to experiment with different/more veggies. She never follows a recipe when she makes this.)
