Meals for a family in need, what to make!?

There is a family that goes to my church that is in need of all three meals for 4 or 5 days. It's a family of 7, so breakfast and dinner is for 7 people, but lunch is just for the two adults. I'm providing breakfast one day and lunch another day. I need ideas! I'm a scrambled eggs for breakfast and salad for lunch kinda person, but I don't want to come over there and scramble them eggs, I'd like to have both meals prepared ahead so I can just bring them over there. Any ideas for salads? They don't sound too picky. Breakfast? Any casserole ideas, or something?

after giving birth I was offered some meals & I liked the meatloaf and mash potatoes combination (which came in containers that I didn't need to wash nor give back) which were delivered hot at dinner time

(in my culture of origin, it's very rare to be offered meals .....)

 

it spurred me on, a few years later, to work on my own meal loaf recipe (I use savory as a flavoring)

and recently I used the same mixture but made it in meatballs which I cooked in tomatoe sauce instead

How about a quiche for breakfast? Make it in the am and bring it over warm. Or the night before, just needing to be baked in the morning. Or bagels and cream cheese or peanut butter, with fruit and yogurt.

 

I got a chicken salad meal to eat on sesame bagels, with fruit, a green salad and brownies when I had my third baby...so good I remember it 9 1/2 years later! yummy.gif

so I made a killer breakfast and now I want to keep it for myself!

 

Frittata that had cheddar, raw heavy cream, bacon, spinach, red peppers, red onions, tomatoes, eggs and topped it with some shredded cheese. On the side I made a fruit salad with peaches and strawberries, squirted some lime juice and topped with sugar to preserve it for the morning. Looks delish! Tomorrow I'm making a cobb salad with bacon, eggs, onions and a homemade dressing. Hope they don't get tired of bacon and eggs! lol.

Shelley, some days I am so tired of bacon and eggs I have to skip having them for breakfast and wait until lunch so I will absolutely love them all over again. LOL

 

Seriously, I eat bacon and eggs almost every single day month after month and I am NOT tired of them.

pancakes are another thing that are easy to make in large quantities if you have a fairly large griddle (on my griddle I can do about 6 - 8 pancakes at a time)

here's the recipe I use...it's a vegan one that doesn't take any milk or eggs so that will save you some money on these things:

2 1/2 cups flour
2 Tbs baking powder
2 Tbs sugar
1 tsp salt
1 Tbs oil
2 1/2 cups soymilk or water

_Lightly_ mix all ingredients in a slightly larger-than-normal bowl; the
batter will be lumpy. It's important not to overmix, as this will make
the pancakes tough (just like making biscuits). Leave 5-10 minutes to
rise, then gently fold in and leave for another 5-10 minutes if you have
the time (not essential). Gently fold in again. Cook on a lightly
oiled/"buttered" griddle on medium to medium-high heat, carefully
breaking up any large lumps that may be left.

for a healthier breakfast applesauce can be substituted for the oil

Just an ideal, you should try adding fried plantains to one of their meals. I'm sure they will enjoy it since it will be something healthy and cheap. You can also teach them how to cook them just as the saying goes "You can teach a man to fish but you can't eat for them."
