My 10mo is doing baby-led weaning (BLW), which means he eats table food and simplified table food with his hands as he is able and interested.

The problem is breakfast. My toddler, who was a more traditional, occasionally-spoon-fed baby, eats muesli made of oats, whole milk, applesauce, and some spices. The baby is SO interested in what he's doing, but eating oatmeal by hand is so messy that he rarely leaves the table satisfied, and I'm not comfortable with him having all that cow milk at this point in his life.

So what I'm searching for-- kind of desperately-- is a vegan or nearly-vegan oatmeal cookie recipe, preferably with applesauce in it and with no honey and very little sugar. LO is happy to gnaw on harder things, but something soft enough for a kid with only a few teeth to eat easily would be awesome.
