No knead bread question

I am in the process of making no knead bread (with ezekiel mix, don't know how this will turn out). ANYWAY, I don't have any covered pans and the bread needs to be used for sandwiches and using my covered pyrex won't work for this.

 

Can I bake this stuff UNCOVERED in a glass loaf pan?

 

Thanks.  I know next to nothing about baking as I'm rethinking my family's gluten free status.

If you have another pan or even a metal mixing bowl you can cover it with that. It might help keep it moist.  Also, add cold water to a hot cookie sheet on the rack underneath the bread pan.  I learned all this stuff while trying to make bread for a year but after soo many rocks, I just decided to make refridgerated sourdough bread (no kneading either) and I either make sandwich rounds or flatbread.  It feels like I eat more like a middle eastern person!

Thanks for the information. My "bread" came out like a brick. And tasted what I think I brick might taste like, too.
