I have a big head of cabbage and no inspiration! Â I used to love to make sauteed cabbage with pierogies and sausage but now that I am a vegetarian and gluten free I have no idea what to do with it. Â :)

Here are a few cabbage recipes http://www.all-creatures.org/recipes/maindish.html
I haven't tried any myself yet but came across this site recently and plan on giving some of the recipes a try since I love cabbage.
Â
While being vegetarian I used to make a casserole dish with chopped cabbage, tomato chunks (adding some sun dried tomatoes is great too!), onion, garlic, spices according to taste, mixed with some kind of pasta and topped with a bit of cheese. In the oven, covered, at 350 F for ~ 30-40 min.
I'll give this a vegan try, using maybe just a little bit of home made nutritional yeast 'cheez' or once I found Cashew nuts, other 'cheez'.

I also like to make stir fry with cabbage. I add it at the last 3 minutes so it's nearly rawish.

I love the traditional Irish dish called "Colcannon". Basically, saute' chopped cabbage with fresh garlic, olive oil, salt and pepper until it turns kind of translucent, and then boil and mash potatoes in your favorite way (we love using leftover vegan scalloped potatoes). Add the mashed up potatoes to the saute' pan, mix it with the cabbage, and cook it for a little bit longer...til all the yummy flavors are properly mixed up and the potatoes start to brown just a little. It is soooo yummy! You can do this with kale, too. Both ways are great by themselves or served with some vegan tempeh or lentil gravy.

I love to make cabbage potato rice soup in the colder months! Sautee diced onions, carrot rounds, and chopped cabbage until the cabbage has reduced in size by about half. Then add in chunky diced potatoes and water/stock/salt/herbs/spices to taste. The recipe I have calls for thyme and paprika for the herbs/spices. When the potatoes are tender add in cooked brown rice, turn off heat and let cool to a edible temperature. :)

This sounds nice too! I love soup, so I'll have to give this a try! (Not sure why I never thought of putting cabbage in my soups before!??)

Egg rolls.
Â
Grate some tofu into oil, add some julienned carrots, green onion, and cabbage. Â Saute. Â Add ginger, garlic, and soya sauce to taste. Â
Â
Place in egg roll wrappers - fry. Â
Â
Have  fun.  They are time consuming but yummy!
Â
I also do this a fair bit:
Â
Â
4 green onions, chopped
1 pkg. Top Ramen noodles (mushroom or veggie), crumbled
1/2 c. sliced almonds
1 pkg. sunflower seeds (optional)
Â
Â
Â
3 tbsp. vinegar
1/4 c. salad oil
1/2 tsp. pepper
Flavor packet from the noodles
