Can you freeze muffin batter?

If I were to make up the batter and freeze it (in muffin wrappers) so that all I have to do is take each individual (frozen) muffin out, put it in the muffin tin, let it defrost and bake it.... would it work? I've frozen already baked muffins before, but I've never tried the muffin batter. Thoughts?

I make a brazilian cheesee bread that I make into dough balls and freeze and they work out fine. I think if you freeze in the paper you could have problems. I would experiment by freezing in ice cube trays then storing in ziplock brand bags (they're bpa free) then pulling out however many you need to fill a muffin pan. Don't know if it will work, but I'd give it a try.

Thanks for the response! Funny enough, we don't have any ice cube trays or anything that I could freeze the batter in and then pop out to freeze. Maybe I'll try a couple with freezing the batter in the paper cup and then bake them in a couple days and see how they turn out.

just curious, what do you anticipate to be the advantage of freezing batter vs. freezing the baked muffins?  it seems like a lot less trouble to me to freeze the baked item for reheating...

You don't even have to defrost them!  Sometime we find that the top of the muffin has kind of an odd shape, but otherwise there appears to be no consequences.

 

I use silicone stand alone muffin cups and them three at a time in the toaster oven.   DD who will only eat freshly baked muffins.  I've chosen not to fight it.

Takes up less space in the freezer, fresh baked muffin in less time (than making it from scratch). And I have a lot of muffins I want to make/freeze in the next day or so and only 1 muffin pan. LOL!

Did it end up working for you StephandOwen? I wouldn't think it would, since batters don't really hold their shape like doughs do. But if it did work, I'd love to know so I can try it.
