Help! Meals for a move!

We're moving next week, so I'm in that awkward "in-between" phase where half of my kitchen is packed away, we've eaten down the pantry and freezers, and we have friends and family coming in to help who we need to feed!

I need ideas for healthy food that requires little prep/cooking/storage and can feed a lot of people.

Bonus points for suggestions that are diabetic-friendly, cheap (we're double-mortgaging it, so we'll be broke!), and easy to eat while packing.

I'm also looking for a yummy lunch idea for moving day: that can be less healthy/cheap since I want to reward my friends heartily for their help lugging my stuff around! orngbiggrin.gif

One of my quick go to meals is turkey roll ups. I just throw some turkey, cheese, mayo, mustard and sometimes lettuce and tomato on a tortilla and you're ready to go. You can use whole wheat tortillas or pitas if you prefer. Veggies and hummus also go great as a side with those.
