Winter Squash

I  was given a ton of winter squash and I am not really sure what to to with it all. Any suggestions or recipe ideas would be greatly appreciated.

 

-The biggest spaghetti squash I've ever seen. It weighed 7 pounds and has given me over 8 cups of squash.

 

-An 11 pound blue squash. About 1/2 of it is cut into chucks and roasting in the oven right now that I might just freeze. The other 1/2 (or maybe less) will be used for this soup recipe.

 

-Then I still have 3.5 pounds of butternut squash that I have just put in the cupboard for now since I now it will last for a long time on the shelf.

I actually use butternut squash as an emergency easy dinner - saute squash cubes in coconut oil over low heat, toss with Greek yogurt and serve over rice.  Delicious.

 

Soup is a good bet too, though I see you're already planning one.
