if i intend to roast the nuts, for further phytate reduction, do i really need to dehydrate them after soaking? or can i go straight from soaking to roasting?

Roasting does not reduce phytates. Soaking does. The dehydration is used to keep the enzymes activated in the soaking process, alive.
Roasting kills them off.
If you intend to roast them anyways, skip the dehydration.
