I need food for work - help please!

I have to take food to work and I am just at a loss. I've been taking peanut butter, pre-packaged salads, and leftover stir fry. I'm sick of everything I can think of and I need more ideas. I have access to a fridge, but since I only get 30 minutes and I have to eat while I pump, I need something that doesn't need to be microwaved. Today, I'm going to make falafel and fried rice with scrambled eggs or tofu and then I'm back to square one for tomorrow.

 

Ideas please!

Hummus, crackers or pitas and veggie sticks

 

I like chili cold, myself. Also several kinds of pasta dishes are great cold - pesto, Asian peanut butter, Pad Thai. Cowboy caviar, avocado and chips.

Soba noodles are great & quick. I toss them in boiling water along with cut-up broccoli (sub carrots, edamame, baby corn, whatever you're not sick of!) & tofu chunks. The broccoli cooks and the tofu heats up at about the same rate that the soba cooks. Then drain & toss with sauce. Good cold (for work) or hot. I make a sauce by splashing on soy sauce, rice vinegar & sriracha sauce to taste.

I ran across this cool thing on pinterest of layering your salad..Like, on Sunday, make a huge batch of salad and in a glass mason jar, layer the dressing on the bottom, veggies in the middle and greens on top. You now have a salad ready to go for every day of the week. The dressing stays away from the greens, and the greens are still nice and fresh every day! I thought this was a cool idea!
