DH, the kids and I were invited to a party to watch the LSU/Alabama football game this Saturday. (We live in TN, and it's hard to find a group of LSU fans around - we got lucky!) Everyone is bringing a few finger food-type things to eat, and we're trying to show some of his co-workers that being vegan doesn't mean we eat lettuce and bland stuff all day long. We also want to make sure we're not starving, because I'm 99% sure that we'll have the only vegan dishes there.

I'm already planning to make a 7-layer dip and a big bowl of guacamole with homemade whole wheat pita chips, and maybe some naan as well. I'm also planning to make the dark chocolate chip cookies from the Engine 2 Diet book. I don't want to resort to a veggie tray, but I will if I have to.Â
