We're not doing anything this year! :( DH will have to get operated shortly before Thanksgiving and since the kids don't really eat any of these kind of dishes (unfortunately!) it'd only be DH and myself this year... I'll still make the Baked ziti dish as well as the lentil loaf though, it sounds super yummy!!!

 

How do you make the chipotle mashed potatoes, Catnip? Just mash some chipotles into the potatoes? shy.gif

I make a nut roast in puff pastry every year, with gravy....my kiddos, however, strongly prefer tofurky to my masterpiece :) -- I just keep hoping they will outgrow it!

Adapted from The Vegetarian Meat and Potatoes Cookbook.

 

2 lbs green beans, ends trimmed

2 TB tahini

2 TB tamari or soy sauce

1 TB mirin (rice wine)

1/2 tsp brown sugar

1 TB sesame oil

2 TB veg or canola or peanut oil

2-3 Shallots minced

2 tsp ginger, minced

2 cloves garlic, minced

 

1. Steam the green beans until just tender, about 5 or so min.  Set aside.

2. Combine the tahini, tamari (or soy), mirin, brown sugar, and sesame oil.  Set aside.

3. Saute the shallots, garlic, and ginger in the oil.  Add the green beans and stiry fry for a few minutes.  Stir in the tahini mixture and cook until the sauce coats the beans.  Serve hot.

I'm ashamed to admit I own this cook book and haven't yet cooked anything from it! shy.gif I guess I should start, huh? I can see I'm missing out on wonderful recipes!!

Ha!  Yes, some damn good things in there!!  Not for thanksgiving necessarily, but the pot roast recipe (done with seitain pieces rather than a loaf) and the macaroni salad recipes are spot on!!

Oh, that's good to know, thanks for the hint! (I'm really bad with owning tons of awesome vegan cook books but never cooking from them but rather print '1000' pages from online blogs etc. What's wrong with me!? LOL

I made this for Thanksgiving yesterday and it was a hit!  Thanks so much for posting the link.  I did substitute green beans for the mushrooms b/c my girls don't like mushrooms.
