10 days of Meals with these ingredients...

I went to the store without a list!! Oh NO!!!

 

Now I need to come up with 10 days worth of meals using the following ingredients... (i.e. this is what's in my fridge / pantry / freezer)

 

heirloom tomatoes

kale

beets and beets and beets

bell peppers (red and yellow)

green beans

carrots

white onions

 

I have two frozen free range chickens, lots of canned / dried beans, lots of frozen grass fed ground beef...

 

I tend to buy lots of fresh produce and by the end of my meal plans it's looking sad and wilted and I need to throw it away... HELP!

 

Only restriction: we don't eat sugar, and each meal needs to feed 3 adults and one toddler.

Ok, well last night I made chicken breasts baked in parchment paper envelopes with kale, and salsa, black beans and corn with brown rice on the side.  I made extra brown rice to use tonight for something....

Dinners only?

 

chili

stir fry with rice

stuffed peppers

tomato soup

roast one of those chickens with some roasted green beans on the side

casserole with the veggies and some rice

chicken and rice soup

chicken fajitas with spanish rice (I just mix cooked rice with salsa and some cheese)

meatloaf

leftover night

 

It's rice heavy because you obviously have rice and I don't know what else is in your pantry.  You can take those sad looking veggies and make stock out of them or throw them in the freezer to make stock later.

Thank-you! Great suggestions! And yes - dinners only.

 

Last night I made chili with ground beef, bell peppers and onions and garlic.  Added garbanzo beans instead of kidney as I don't actually have kidney beans.  Was delicious!

I know you've probably used half of it already, but I cannot resist mystery basket type situations. :-) So my suggestions are - 

 

onion tart

borscht

stuffed tomatoes 

kale and bean pasta 

roasted chicken with garlic green beans

beef stirfry with bell peppers

vegetable soup

chicken and dumplings with kale

beef with roasted beets

baked rice with onions and tomatoes
