Really basic, but I just like putting them down the disposal--- they smell great and clean it out.
I know this thread is 3 weeks old, but we've been going through a lot of clementines in our house lately. Here's what I do w/ them:
Toss them in a pot of water w/ cinnamon sticks and whole cloves. Bring to a boil and simmer for a bit. Makes the house smell AMAZING!!
Trim off as much of the pith as possible and toss in a jar w/ vinegar. Makes a citrus vinegar great for de-greasing. Here's some info:

You can do anything with them you might do with orange peel. From marmalade to candying, drying, decorating, etc.
I actually use mandarin (zest, juice) in place of orange in recipes, since my DS is allergic to oranges.
candied, marmalade,. I dry my extra zests and use them later for potpurri or a recipe I want a mild orange/whatever flavor with
