Help quick! Forgot to turn stove on with pot full of dinner...

My brain needs a vacation...we just moved, DD2 was up all night with an ear infection & I am exhausted...which led to a cooking blunder...

 

I put a roast in my pot with carrots & stock intending to actually turn the stove top on & cook it for 8 hours on low...I forgot to turn the stove on & I really don't want to wait until 8pm to serve dinner & dry it out by cooking it on high for 4 hours or so.  Could I just put the whole pot into the fridge & take it out & start it in the AM for tomorrow's dinner? 

 

I realized it when I started to peel potatoes to throw in so now I also have a few potatoes peeled...can those be saved for tomorrow nights dinner?  

 

Or do I take the meat out of the liquid & wrap it for fridge & dump liquid & veggies & start with new ones tomorrow?

As long as it gets cooked and boiled tomorrow, I'd say just leave it as is and put it in the fridge. Boil tomorrow with the same water and everything would be my opinion.

Put the peeled potatoes in a bowl of water, since they'll brown.  But otherwise, I'd just do like the pp suggested and try again tomorrow.

I put it all in the fridge overnight & started it this am at 10am.  Brought it to a boil, then low for 8 hours.  It came out amazing...fell apart just lifting it out.  My SIL came over with the kids today & everyone enjoyed dinner.
