what are your favorite recipes for left over turkey
This is what I'm doing with my leftover mashed potatoes.
In the past we've made turkey curry with root vegetables. Really good. Also turkey and chipotle cranberry quesadillas. Yum.

I made the pot pie yesterday and still have quite a bit of turkey, so.....
I've had a big pot of turkey stock boiling on the stove so I think I'm going to make turkey wild rice soup today or tomorrow.
I was also looking at this thai peanut chicken salad recipe I've been wanting to make and thought the turkey might be good in that, too.
I make a Turkey Chilaquiles-type casserole. Even though I love the traditional flavors of Thanksgiving, the Mexican flavors are a nice change that everyone seems to look forward to.
In a saucepan, heat 1 cup stock and 1 cup salsa with 2 cups chopped, cooked turkey. Add 1 cup black beans and 1/2 cup frozen corn. Cook to reduce liquid, about 6-8 minutes. Crumble crunchy corn tortillas and stir into the mix. Pour everything into a greased casserole dish. Cover with grated cheese, bake at 350 until cheese is melted, about 5-10 minutes. Serve with sour cream and salsa.
