go-to salad dressing?

My usual go-to salad dressing is ken's creamy caesar...  with pre-bagged romaine, i can make a super quick caesar salad to go with any meal and everyone likes it...  I'm going dairy free again and I hate that there's so much other stuff in there anyway -- but hey - the family's eating salad :)  

 

I have a great balsamic dressing that I make, but those kinds of salads just seem to take longer and need more ingredients... 

 

Anyone have a good, easy to make and possibly store for a week or two at a time dairy free kind of like caesar (it doesn't have to be caesar, but think salad of mostly lettuce with maybe some croutons or some sort of grab from pantry ingredients thrown in) dressing??

I amended a recipe from Appetite for Reduction by Isa Chandra Moskowitz. My version is juice of one lemon, and a tablespoon each miso, tahini and mustard, and then enough water to thin it out to taste. I sometimes put in chopped green onion. If you don't mind putting your dressing in a glass jar and shaking it up a lot, it comes out nicely creamy. I guess you could whisk it together in a bowl, also. It's not as easy as opening a bottled dressing, though. Nice with lettuce or spinach and clementines or other citrus fruit.

I usually mix up lemon juice, olive oil and fresh crushed garlic clove.  Mustard optional.  Not like caesar at all but the garlic makes it really yummy!  The more bitter the green the better it tastes!

capt optimism - i have 3 young boys... shaking is NOT a problem! :)  In fact, it might even be helpful ...  do you make it per use, or does is save for a few days?

 

heather - i make a dressing like that for a chickpea salad (chickpeas, peas, tomatoes, avacado) and its awesome...never thought of trying it on greens...  ;)
