Make stock/soup out of them. That's the reason they're so great in beans - the stock flavors the beans. It can do the same to veggies. Any soup recipe that calls for bacon or ham would work. I made a great one with squash, bacon and swiss cheese (although I realize cheese isn't primal).Â

Just boil the ham bones first to make the stock and get the meat shreddable. Proceed from there.Â
ok so i made one. i hope that someone finds this useful. i made enough to feed an army bc i had two hambones.
Â
bones simmered for at least an hour and a half
dice
2 medium onion
4 stalks celery
chop
1 sweet potato
1 T of herbs de provence
throw it in and cook for another hour
three lbs of a four lb bag of frozen normandy veggies from birds eye
6 oz or so of corn frozen
1 lb frozen spinach
half a bottle of pinot grigio
1/3 c of ACV (it was *really* needing the acid bite even with a half bottle of wine in it!)
S&P to taste
cooked a bit and then decided that we wanted to add cream, so we used about 1.5 cups of heavy cream in it. it could totally be left out though, bc it was pretty tasty.

really really good soup. not strictly primal, but neither are we. we do avoid grains pretty strictly though as well as legumes, so im glad i decided to wing it instead of falling back on split peas or something else like that.
