Freezer stock up

I know there have already been a ton of threads on this topic, but since it's a topic on my mind right now, I thought I'd go ahead and start yet, another one..except veggie only this time!

 

I am in my last year of nursing school and just found out my last semester is going to be CRAZY so I am planning on stocking up my freezer over the holiday break.  Here are some of the things I'm planning on making:

 

-Spanikopita

-Lentil Soup

-Black bean soup

-Sweet Potato chilli

-Italian stew

-Hand calzones

-mini quiche

-LOTS of pizza crust

-Lasgnana

-Veggie enchiladas

 

Anyone want to add or share recipes?  I've accumulated most of these by searching through old threads, but I didn't see any in the veg*n section..

Here's our favorite vegan freezer meals:

  • Tofu mattar paneer (I think this recipe is really excellent, I also add coconut milk to mine) is actually better after freezing and thawing -- the tofu improves in texture
  • Potato soup -- we throw in about 7 potatoes and any veggies that need to be cooked, lots of dill and garlic and a splash of soy milk, then blend to a puree and freeze in quart jars or Ziplock bags
  • Crock pot vegan baked beans freeze well, then you can thaw them and serve with a veggie burger and potato salad for a Southern-style meal.  Try freezing some fresh collard greens now while they're in season, then you can boil some up to go with it.  Heck, freeze some cornbread while you're at it!  
  • We do lots and lots of lentil soup!
  • You can always make a big pot of spaghetti sauce (we throw in tons of veggies, TVP, artichoke hearts, mushrooms) and freeze for later -- you can pair it with these very good vegan meatballs for a great meal.
  • Any kind of vegetable curry usually freezes well.  We sometimes buy frozen prepared Indian breads to heat up for a treat with a curry like this.  I'd imagine you could make your own and freeze, too.

Freeze soups and sauces in ice cube trays then store in ziplock bags or containers. Heat what you need.

 

Freeze cooked rice pasta or cooked brown rice on wax paper covered cookie sheets. Store in containers. Rice just needs to be heated, pasta needs to be heated with a bit of water (if using microwave.)

 

Mung bean tortillas are great. http://spiceandmore.wordpress.com/2009/08/17/an-exciting-discovery/ I make 30 or 40 at a time and freeze with wax paper between them.

Just thought I'd up-date..

 

So far I have made a big lasagna sized pan of veggie enchiladas, a spinach lasagna and a bunch of mini quiche's and three pizza doughs (there will be more of those to come).  I am still planning to do hand calzones, eggplant parmesan, spanikopita, veggie pot pies and lots of soups/stews.  I was going to make veggie burgers, but I think I'll just buy a pack of them at Costco to save time.

Oh, no, you should totally make your own veggie burgers rather than buying them!  It's very easy and you can make a TON.  We make a big batch every few months and freeze them in Ziploc bags.  We have a great black bean burger recipe that we came up with after tons of trial and error -- I posted it to Allrecipes a while ago.  Here's the link: http://allrecipes.com/personalrecipe/62340287/best-vegetarian-black-bean-burgers/detail.aspx

These look easier than the recipe I've used..and also looks like it might stay together better with the egg.  The ones I make are vegan and I have to dip them in flour before frying them.  They are delicious but the fall apart everywhere!  Do you wrap the patties individually in celphane or foil before you freeze them?

I sometimes separate the patties with wax paper or foil, but honestly, they don't stick together too bad in the freezer.  I often just throw half a dozen in a large Ziploc bag and toss 'em in the freezer as they are.  Let me know how you like these if you decide to make them!  We really love them around here.

Before I give birth, I'm planning to stock the freezer with at least two kinds of homemade veggie burgers, bean burritos, and at least one soup.

Re:  black bean burgers, I have noticed that a big secret to any vegan bean burger is mashing well.  It doesn't need to be smooth, of course, but the more you mash, the better they seem to stick together.

The thing that I am always glad to have in the freezer is healthy snack foods - whole grain mini muffins made  with lots of ground flax seed, stuffed full of  dried fruits and nuts.

How about some full meals?  Like a ziploc freezer container with rice, veg, and some curry like one of those single serve freezer meals. 

 

Tamale Pie is yummy and freezes well.  If you have a cornbread mix you like, you can just freeze a filling or use canned chili, top with prepared mix and bake.  You can freeze sheepherds pie filling and just cover with instant potatoes.
