What do you think of my vegan pigs-in-blankets ideas? Thoughts on sauce?

I am feeling tired lately, and because I've agreed to bring about four dishes to three holiday parties over a span of two days, I am thinking of making one of these extra-easy.  I just had the idea of vegan pigs in blankets.  I definitely plan to use Field Roast brand products, because I am going to be hit with a lot of soy over the holidays, and I want to make these soy-free.  I was thinking of using either the frankfurters (which would be more traditional) or the Italian sausage, and wrapping them in crescent rolls.  If I use the Frankfurters, I'll make some sort of mustard dipping sauce.  Do you have any sauce ideas for the Italian sausages-in-blankets?  Overall, which "pig" idea do you like better?

 

For the three parties, I'm also making:

Hash brown/vegan apple sausage casserole (by special request for brunch party)

Peanut butter chocolate pie (by special request for afternoon party)

Some cookies for Christmas Eve party, possibly pine nut cookies or possibly rumnog cookies

 

The pigs would be for the Christmas Eve party, too.

P.S.  No one else will be vegan except my husband, who would probably like whatever I made.

i love a good vegan pig in a blanket with mustard sauce. although italian sausage and marinara would be equally appealing

Oh wow, I didn't realize Field Roast made frankfurters.  I had to go google it.  I love their products, but I've only had the other kinds of sausages, the deli slices, and the celebration roast. 

I vote frankfurter pigs in blankets with a mustard sauce.  Yum.

My first thought was marinara, too, that would be a great dipping sauce. I think either of those two ideas would be good. Maybe it's too much work with everything else you have to do, but what about doing half and half, so there is a choice?

Please post the hash brown & apple casserole, that sounds delicious and like something my kids would go for!

Oh, "apple" is only part of the recipe for me, because I happen to use apple sausage - again, by Field Roast.  The original calls for a generic vegan sausage that you can crumble, but the Field Roast sausages are the only commercially available non-soy vegan sausages that I know, and when I made the recipe before (as now :-)), I didn't feel like making my own.  Of course, I have to slice them instead of crumbling.  Here is the recipe:

Thanks to everyone or the ideas.  I am leaning towards just doing the frankfurters at the moment, as I am thinking that the mustard sauce would do better at room temperature.  The casserole is for a small gathering at my in-laws' house, where they know I'll need the oven and even requested the dish, but for the big, annual Christmas Eve party (at a cousin's) I usually try to bring something I don't have to heat.  That's the constant potluck challenge for me - bringing something to be among the few vegan dishes available (along with crudite and sometimes a surprise main dish), without having to ask to use the kitchen.
