I like to sauté boxed diced tomatoes in some olive oil. Add cumin powder and chili powder. When the tomatoes are fragrant, I add a can of black beans, some fresh or frozen corn. Cook until heated through. If you like lime, a little fresh lime juice tossed in is nice.
Mix with the quinoa, top with avocado slices, a wedge of lime, or guacamole.
We also like this "recipe". It's a mishmash of stuff but my girls like all the ingredients and will devour it. I cook frozen shelled edamame with frozen peas for about 5 min, until done. I mix the hot quinoa with olive oil, add the edamame/peas mix along with chopped sun dried tomatoes.
I also like to sauté a small amount of chopped onion, a clove of garlic and a can of chickpeas in olive oil. Add salt and dried thyme as it's sautéing. Toss with the quinoa.
