Favourite vegan quinoa recipes?

Looking for recipe ideas for vegan quinoa dishes, instead of just using it in place of rice in meals. What are your favourites? Bonus points if it freezes well! (I've got some time this week with dh home so I want to feed my freezer as much as possible!)

I like to sauté boxed diced tomatoes in some olive oil.  Add cumin powder and chili powder.  When the tomatoes are fragrant, I add a can of black beans, some fresh or frozen corn.  Cook until heated through.  If you like lime, a little fresh lime juice tossed in is nice.  

 

Mix with the quinoa, top with avocado slices, a wedge of lime, or guacamole.  

 

We also like this "recipe".  It's a mishmash of stuff but my girls like all the ingredients and will devour it.  I cook frozen shelled edamame with frozen peas for about 5 min, until done.  I mix the hot quinoa with olive oil, add the edamame/peas mix along with chopped sun dried tomatoes. 

 

I also like to sauté a small amount of chopped onion, a clove of garlic and a can of chickpeas in olive oil.  Add salt and dried thyme as it's sautéing. Toss with the quinoa.

I made this recipe over the weekend and it was awesome.  Yum.  I used it mainly as a side, but it could definitely be a meal too.

I can't remember if I found the recipe here or not, but somehow it ended up in my favourites.

I just made these, from The Best Veggie Burgers on the Planet by Joni Marie Newman, last night:

It was possibly the best recipe using quinoa I've ever tried.  Typically, I like quinoa better for breakfast, served as a hot cereal with almond milk, blueberries, agave, slivered almonds, etc., but these burgers were amazing.  The book suggests serving them over salad greens with tahini sauce.  I did the tahini sauce, but put cooked kale on the side instead of serving over salad.  They definitely don't need buns, despite the "burger" label.

 

The book preface says that all of the burgers can be frozen;  it suggests freezing on a single layer (e.g., a baking sheet) and then putting them in a ziplock bag for storage.  Then, just cook them as normal;  no need to defrost.  I am planning to take a couple of our favorite recipes from this book and freezing burgers when my due date grows near.  (We just got the book as a present, and the quinoa burgers were the first ones we tried.)

In general like to take ANY recipe that calls for rice and substutute with Quinoa and has worked out wonderful.

Add cooked quinoa to your favorite mashed potato recipe...it is very tasty and very good for you.

This double broccoli quinoa recipe has definitely made it into my rotation. It calls for cream and parm cheese, but I think you could sub the cream and either leave out the parm or use a vegan cheese - it's more of a flavoring than an actual cheese texture you'd need to sub.

Milk: I made the quinoa/black bean/chipotle recipe last night. I added chopped kale and a chopped avocado. It was really yummy and made a complete meal for both me a DH with leftovers to boot. :-)

This one is the best one I have tried:

 

Cook the red or white quinoa and put aside,

Chop up broccoli, cauliflower and red pepper and shred 1 carrot and put in a bowl and put it aside

 

Mix in a blender:

  • 1/2 extra virgin olive oil
  • half a red pepper
  • 5 tsp of nutritional yeast
  • 1 tsp sea salt
  • 1 tbsp honey
  • 1/5 a tsp apple cider vinegar
  • 1 tsp oregano

Blend well, then put mixture on top of quinoa and mix in veggies and eat! SO GOOD!

If you want the veggies to be softer just let them sit in the hot quinoa for 10 minutes. Don't fry the veggies. Did you know that 90% of the nutrients is lost when cooking or frying veggies.
