Great Muffin Recipe?

Thread Starter

We've been lacking in the snack department lately! I love muffins of all types.  I'd love a nutritious, hearty one, so I won't be tempted to reach for more than one (or two, hehe).

The cheaper the better, but if not- it's cool.

I tried this recipe today, and it was great (of course, I did add chocolate chips!):

I guess these are not particularly healthy, but healthier than some recipes I've seen. I'd like to try 1/2 oats, 1/2 WW flour next time. Not sure what to sub for buttermilk if you are vegan?

Vegan buttermilk sub - just add a splash of vinegar or lemon juice to a milk sub and let it curdle for a few minutes.

Post Punk Kitchen's Best pumpkin muffins ever are THE BEST.  Here's a link to the recipe:  http://www.theppk.com/2009/11/the-best-pumpkin-muffins/

They're truly amazing.  Don't overmix, though!
