Ricotta cheese but not lasagna noodles

I looked online but kept coming up with ricotta pretty much only pairs with lasagna noodles.  I do not have those noodles and don't really want a lasagna.  Who makes spinach noodles or whole wheat noodles with ricotta but not lasagna noodles?

The pasta ingredients I do have are 3 different types of whole wheat noodles and some spinach long spaghetti noodles.

I also have fresh pasta sauce, fresh spinach, and fresh mushrooms I would love to add those to the dish if possible.  Plus some red onion.

Any ideas?

there's much more you can do.

manicotti

stuffed shells

ricotta pie (not a pasta dish but like a cheesecake)

the non spaghetti noodles you have- are they hollow, like penne?

you can just layer them in a casserole dish like you would a lasagna and bake - put cheese on top-

use the veggies and ricott in the layers with the sauce.  i guess you could do the same with non-hollow pasta too, i tend to just do the baked penne lots myself.

I'm making this for lunch (more or less; I changed a few ingredients): http://www.healthytippingpoint.com/2011/12/stuffed-potato-skin-shells.html
