Total tangent to the thread - but I just had to add that I love coconut milk ice cream! And two other fun deserts that I have made in the last few weeks are:

(and they are totally raw and vegan! I just realized that)

 

Avocado Pudding

 

2 avocado

2-3 T cocoa powder

Sweetener of choice (stevia, dates, sugar...etc... I used raw honey; 1 T)

I also added some vanilla

 

Blend in a food processor until smooth! This is a magical thing... it really looks and tastes like pudding!!! joy.gif

 

Banana Ice Cream

 

2 bananas, very ripe: brown spots starting to form, but not taking over

Optional: cocoa powder, vanilla extract, or other fun stuff to try!

 

Peel and slice bananas into 1/4 inch slices. Freeze at least several hours so they are frozen all the way through.

Place frozen bananas and any extras into a food processor and process for a minute or two... magic... it will turn into an ice cream consistency!

I'm not a fan of bananas really, but I put cocoa powder and vanilla extract and it just tasted mildly banana-y; mostly chocolatey! thumb.gif

Today I am over the moon grateful for the wonderful nights sleep we got last night!!! R and I slept from 9pm-4am without interruption! joy.gif

Today, I am grateful for family.

 

DH got hurt at work the other night. He dropped a retractable knife and it didn't retract like it was supposed to. It cut his left wrist and nicked an artery. After a trip to the ER and an emergency surgery to fix his artery, he's got a splint/stitches now.

 

So, the nurse at work switched him to 1st shift (He usually works 2nds) so that she can be there to monitor him while he's on work restriction.

 

TALK ABOUT LAST MINUTE.

 

Both of our families came together and got the entire next week covered for us so we don't have to worry about not having a babysitter while he works and while I work and go to school.

Today, I am grateful for not giving up.  DH had the baby, while I was "off duty".  He kept insisting the baby was getting fussy, because he was vocalizing a lot more than usual.  I didn't think so.  DH was getting frustrated.  I was about to take the baby back, when DH put him in the bassinet and started playing peekaboo.  The baby laughed for the first time!  He was squealing with joy, and my dh was laughing and so very pleased.  It was great!

 

I am also thankful for a 5+ hour stretch of sleep last night.  I think this is the second one this week.  I hope this is the start of a trend!

 

And also also thankful for the twin bed that will be delivered in a few days, making our bedroom a giant pile of bed.  I am *so* hopeful that we can start sleeping in bed together!

Oh, that's sounds dreamy. I adore coconut. Trader Joe's has one that's so good, but we live out in the sticks so that's not something we do. Thank you so much for the recipe.

Can anybody share a really good curry recipe? I LOVE LOVE LOVE curry but I've never been able to make it taste very good. I'm not able to eat DH's Japanese curry anymore since it has gluten in it, so I feel really left out when we make that. I love all curries, Thai, Japanese, Indian, whatever... although Thai curry is one of my favorite things EVER... so bring on the recipes! orngbiggrin.gif

I use 2 cans of coconut milk, curry powder to taste and salt.  That's it for the sauce.  I tend to make chicken, bell pepper, onion, pineapple, whatever else is in my fridge stir-fry and then dump on some coconut milk and curry powder.  It's super simple and we love it!

Today I am grateful for...

 

... going to the movies! We saw The Secret World of Arrietty, just R and me and some people from our local AP group. It was a baby friendly movie morning and it was sooo cool! Coolest thing... almost every woman there was breastfeeding and babywearing!! joy.gif

very cool.  We've taken Shay 5 times.  Just the regular movies, we totally aren't the only ones.  Its so cool when they're young enough to do that still.

 

I'm grateful that Shay took a nap on the bed alone today.

Today, I'm grateful for 5-hour shifts at work!

 

I normally only get to see Conner for an hour or two a day (Of awake time) so being off at noon today gave us LOTS of time to hang out. It was awesome. And tiring, LOL. I'm less exhausted when I work an 8-hour day than I am when I spend 8 hours with Conner. LOL!

Today I am grateful for...

 

... my wonderful sleeper baby! He's such a great sleeper at night. For the last week he's been awesome! Sleeping 10-12 hours with just one, sometimes two wake ups. Ahhhhh, so nice!! And as I type this he's been asleep four hours - I nursed him down at 7:30 and he only woke once for a quick potty, but didn't need to nurse back down.

Today, I am grateful for coffee... And naps. I don't know that Conner had any sound sleep last night at all. I'm pretty sure he tossed and turned ALL NIGHT. Sigh.

Today I am thrilled about chard! Mild winter didn't kill the root and I found 3 colors of chard in my bed from last year. Yum!
