Bitter millet flour

I ground up a bunch of millet and have been storing it in my freezer.  I tried to make cream of millet cereal and it is horribly bitter!  I made some yesterday but had freshly ground some up (I forgot about the stuff in the freezer) and it was fine.  Does millet flour just go bitter after awhile, no matter how it is stored?

How long ago did you grind it?

As far as I know it's not suppose to go bad so easily, unless didn't store properly. Any chance the grains were old when you bought them?

As a thumb rule, whole grains goes bad more easily because of their high fat content. I don't know if you used whole millet grains or not, but just keep that in mind.
