Chili cook off!

I won second place in a chili cook off last night. Tried a new recipe I invented that was greatly appreciated by the audience.

Here is the recipe for a large crockpot.


Lamb, Lentil and Xocolatl chili

2 29 ounce cans of tomato sauce

3 14.5 ounce cans of petite diced tomatoes

1 lb. Steamed lentils

2 lbs ground lamb

2 cups vegetable broth

½ medium sweet onion diced and pan fried

1 tsp chili powder

1 tsp Hungary Sweet paprika

2 tsp Dagoba xocolatl

3 tsp cumin seed

1 tsp Aleppo pepper

1 tsp chipotle

















I'd love to hear your variations on chili for next year's contest.

That looks delicious! Congratulations!

 

What kind of lentils? duPuy would probably work nicely because they don't lose their shape, but I'm wondering if red lentils would make a nice, thick "sauce" because they lose their shape, lol! Which is it, if you don't mind?  

 

Years ago, I used to get a vegetarian couscous chili from a take-out health food place. I've searched for a similar recipe, with no success. 

 

These days, I make either an Italian sausage/black bean chili or a basic ground beef/kidney or black bean (or both).

I cheated on the lentils and bought a package of steamed lentils from Trader Joe's. They were just a warm brown color.

Okay, thanks. One more question - did you brown the ground lamb before it went into the slow cooker? Thanks again.

Yes,in a skillet with a touch of olive oil.
