Considering unschooling in FL(and hi :D)

I've been reading this forum for a while now, but just recently decided to join and participate. I'm a parent of a toddler(so no rush or anything lol), and considering unschooling as a very real path for her. I've read the laws in Florida for homeschooling and all I have to question is 2 things:

How can I find a teacher that agrees with the method of unschooling to perform her evaluation, and how would I go about making a portfolio of learning including the curriculum used if there really is no curriculum?

Is anyone on here in Florida or a state with similar laws that could explain that for me?

I am in Florida. You also have the option of using an umbrella school, which is what I chose. We're working under Florida Unschoolers. They do not charge and all I have to do is report attendance quarterly, which consists of going to their website and entering the number of days DD has participated in learning (minimum of 180 days per year) after receiving an email reminder. No portfolio reviews, no evaluations. It takes away the stress of having to convince someone else that DD is learning and let's us focus on actually learning and living.

I saw that but wasn't sure how you counted 'attendance' lol. I have issues with lying(though I also have issues with old men sitting arund dictating what and when my child learns...hmm) so I guess any day would be a school day if she learned something? :D

If you are going to do unschooling, then everyday is a learning day.  By definition, unschooling is 'child led learning' so everything and anything would count.

When I read the florida website there are a number of options for reporting.  A portfolio or teacher assessment are only a couple options.

Thanks so much for your advice. That makes me feel a lot more confident in the ability to 'do' unschooling when we get to that, if they don't try to change legislation by then.
