I just wanted to second the recommendation for Green Mountain Diaper prefolds, we use them and they are awesome.  And indestructible (we have to handwash our diapers most of the time--no washing machine--so they get scrubbed with a hard-bristle brush every day), which might be good in your situation if you end up boiling them a lot!

I know you hate prefolds but did you try using a Snappi fastener?  My DH was really dubious about prefolds because of the diaper pins, and the Snappi made all the difference to him.

Boiling was the only thing that got rid of our stink issue.  My dd was also getting the open sore type of rash.   

After I boil them for a couple of minutes, I put them in the washer with hot water, and rinse, rinse, rinse.  I was amazed at the suds I got.  My problem seems to be detergent residue because I just stripped out the stink within the month and I still had lots of suds. 

My girls both react to it more once they're older and not even in diapers as much.  At first I blamed it on stronger urine, but she's been fine as long as I can keep them stripped.
