I'm trying to plan for an early Easter dinner/brunch - so far I'm thinking of a ham, some spinach quiche, maybe asparagus....and, and.....I'm stuck! Thought hearing other people's menus might give me some ideas!

Well, I was planing doing more of a breakfast/brunch - but then MIL was all 'I'm bringing ham and kielbasa', so it's less of that now.
I'm making a favorite spinach-strawberry salad with maple-mustard dressing, broccoli-cheese-beer soup, and tempeh puffs (tempeh & peppers marinated & cooked on puff pastry squares). Then lemon-oat squares, and homemade blintzes (I erred on a lighter menu so I can make sure I have room to enjoy those

I'd love your recipe for the strawberry spinach salad if you didn't mind :) I saw a bunch of those and they sounded good, but maple/mustard dressing sounds much better than the white sugar/vinegar ones I've come across!
I think I'm going to skip the quiche and go in more of a dinner direction - DH is clamoring for potatoes with the ham and I found a good au gratin one and another recipe for asparagus w/ balsamic butter sauce :)

Maple-mustard dressing which is the same one I use (from veganomicon). It's really good, even my 5 y/o likes it (I let her make it herself, usually). I like it with baby spinach, sliced strawberries, and plan on having red onion this time too (pepitas are also good with this salad but I'm out and don't think I'll pick them up this weekend).

I love traditional Easter food and MIL today says she's making Eggs Benedict. I am always grateful for free food, but Hollandaise sauce always reminded of something really gross. Ew.

We now do a late lunch--ham, rolls to make sandwiches, potato salad, deviled eggs, fruit salad, broccoli slaw, cabbage slaw, cheese cake, home-made ice cream (actually all the dishes with the exception of the rolls are home-made). The plastic eggs for the Easter egg hunt will be filled with candy.
When we did a brunch, we had huevos rancheros, cut up mixed fruit, cheese pancakes (latkas), ham, and I forget what else.

We are actually doing Easter dinner a day late since Im just not feeling up to it today. Morning sickness is kicking my bottom today.. Im making deviled eggs, baked ham, mashed potatoes, broccoli and maybe green bean casserole.. With cresent rolls on the side for if the kids want to be picky.. For dessert my husband got apple pie :)
